How about chicken for dinner tonight? It’s very simple to do one that is wonderfully, mildly ����avored with butter and garlic. A
success for Sunday dinner.

Preheat the oven to 400°F (200°C). Bring out the chicken and salt and pepper –
 both inside and out.
Place chicken breast up in a baking dish. Squeeze the garlic cloves and melt the
butter in a small saucepan on medium heat. The butter should not turn brown,
just melt.
Mix butter and garlic and let cool for a couple of minutes.
Pour the garlic butter over and inside the chicken. Bake on lower rack in oven
for at least 50–60 minutes until internal temperature reaches 180°F (82°C).
Baste with the juices from the bottom of the pan every 20 minutes.
Make sure the chicken is done before removing from the oven. Poke a skewer
between thigh and breast, the juice should be clear, not pink.
Serve with the juices and a side dish of your choice.
1 chicken, a whole bird
2 teaspoons sea salt
