The course will cover all areas of traditional Italian cookery. The making of
fresh pasta- classic sauces- vegetarian & non-vegetarian main courses &
starters, Desserts, traditional breads & dough.
You will learn technical terms associated with this type of cookery, as you
will have to read recipes and other handouts written in English and
discuss them with the tutor and other learners. You will also use digital
scales to measure quantities of ingredients and to adjust the quantities
accordingly, based on the requirements of the recipe and the number of
people you will be preparing it for.
Everyone will be treated equally and every opinion counts. You will be
encouraged to discuss ingredients and recipes from your country or
cultural background similar to the ones used in your classes.

By the end of the course you will be able to:

Demonstrate basic knife skills, health & safety, general food hygiene
knowledge;
Prepare & cook 4 classic sauces, demonstrate making fresh pasta & how
to roll & fill tortellini, ravioli & panzotta;
Prepare, cook & serve 3 classic Italian desserts;
Make 2 different Italian breads & make fresh pizza dough;

Your tutor will provide you with a list of ingredients that you will need to
buy and bring to class on a weekly basis.
A note book & pen will be required to take notes.
Various other cookery courses at Idea Store Learning.
What examination or assessment will there be and what will it involve?
Assessments will be carried out throughout the course. The tutor will constantly check your progress
to ensure you have understood each process.
Please note on all examination courses, it is a requirement that you provide photographic proof of
ID. This is for external awarding body and internal invigilation authentication purposes.
How will I know I am making progress?
You will be taking your finished work home & the proof is in the eating. Your tutor will also give you
feedback on your progress.
Is there anything else I need to know?
Italian food reflects the Italian life style La Dolce Vita (Sweet Life). So you will need to have a degree
of enthusiasm about the subject.
